Manager Daniel Fox says he first places lime cuts in a tumber and tops them with crushed ice. In a shaker, he muddles lime, brandy and syrup, then strains it over the crushed ice. It’s a simple, sweet way to enjoy Fish Eagle brandy. Fox recommends this drink for those who enjoy a mojito.

Frères Bistro is taking part in the growing route that aims to celebrate brandy as the base of cocktail creations. It started off as a modern extension of the R62 and Western Cape Brandy Routes. The Urban Brandy Cocktail Route now has restaurant­s across Cape Town and new routes are planned for Joburg and Cape Town.

The restaurant is a cute French style bistro, next to Col’Cacchio on the Foreshore, that has been open for nine months and is making good progress. Having a corner spot doesn’t hurt and neither does their amazing onion soup.
