Man­ager Daniel Fox says he first places lime cuts in a tum­ber and tops them with crushed ice. In a shaker, he mud­dles lime, brandy and syrup, then strains it over the crushed ice. It’s a sim­ple, sweet way to en­joy Fish Ea­gle brandy. Fox rec­om­mends this drink for those who en­joy a mo­jito.

Frères Bistro is tak­ing part in the grow­ing route that aims to cel­e­brate brandy as the base of cock­tail cre­ations. It started off as a mod­ern ex­ten­sion of the R62 and Western Cape Brandy Routes. The Ur­ban Brandy Cock­tail Route now has restau­rants across Cape Town and new routes are planned for Joburg and Cape Town.

The restau­rant is a cute French style bistro, next to Col’Cac­chio on the Fore­shore, that has been open for nine months and is mak­ing good progress. Hav­ing a cor­ner spot doesn’t hurt and nei­ther does their amaz­ing onion soup.
