info@95keerom. com RISOTTO is one of those dishes you either love or hate. There is no in-between. At 95 Keerom in Cape Town there’s a passionate love affair with risotto.
The Italian rice dish is being celebrated this month with 16 different masterly prepared risotto dishes on offer – four per night, changing weekly.
Chef-proprietor Giorgio Nava has teamed up with chefs Nicoló Rovarini and Federico Rocca for this once-off menu that is real Italian flavour.
In a preview of their dishes, they prepared a few different risottos as a tasty teaser of what’s on the menu.
One of my favourites was the risotto al pomodoro e stracciatella, which is risotto with fresh tomatoes and Burrata stracciatella cheese.
The combination of fresh tomatoes and cheese is a delight to the palate and at first glance looked like a very thin broth, but it was a well-balanced meal.
Nava said: “In none of the risottos have we used cream or butter,” which is part of the Italian original recipes. The risotto with beetroot and blue cheese is a real treat for the tastebuds and the eye. On the tasting menu, the risotto with butternut and almond biscuits was the final meal and it shouldn’t have been.
It’s quite a sweet dish, which is why it was saved for last as a replacement for a dessert, but it’s more than that.
After nibbling on all four risottos served before the butternut dish, it was a bit overwhelming and couldn’t be fully enjoyed.
