A real treat for risotto lovers

info@95keerom. com RISOTTO is one of those dishes you ei­ther love or hate. There is no in-be­tween. At 95 Keerom in Cape Town there’s a pas­sion­ate love af­fair with risotto.

The Ital­ian rice dish is be­ing cel­e­brated this month with 16 dif­fer­ent mas­terly pre­pared risotto dishes on of­fer – four per night, chang­ing weekly.

Chef-pro­pri­etor Gior­gio Nava has teamed up with chefs Ni­coló Ro­varini and Fed­erico Rocca for this once-off menu that is real Ital­ian flavour.

In a pre­view of their dishes, they pre­pared a few dif­fer­ent risot­tos as a tasty teaser of what’s on the menu.

One of my favourites was the risotto al po­modoro e strac­ciatella, which is risotto with fresh toma­toes and Bur­rata strac­ciatella cheese.

The com­bi­na­tion of fresh toma­toes and cheese is a de­light to the palate and at first glance looked like a very thin broth, but it was a well-bal­anced meal.

Nava said: “In none of the risot­tos have we used cream or but­ter,” which is part of the Ital­ian orig­i­nal recipes. The risotto with beet­root and blue cheese is a real treat for the taste­buds and the eye. On the tast­ing menu, the risotto with but­ter­nut and al­mond bis­cuits was the fi­nal meal and it shouldn’t have been.

It’s quite a sweet dish, which is why it was saved for last as a re­place­ment for a dessert, but it’s more than that.

Af­ter nib­bling on all four risot­tos served be­fore the but­ter­nut dish, it was a bit over­whelm­ing and couldn’t be fully en­joyed.
