Yeast is pretty essential for making bread, but there’s more than one kind
Fresh yeast comes in a block form and is crumbled into dough. Use double the amount of fresh yeast as you would dry yeast. Most bakers prefer fresh yeast to dry.
There’s no need to mix instant yeast with warm milk or water, use it straight from the packet. It behaves the same way as fresh yeast – the fact that it’s dried is more about convenience than anything else.
If you run out of yeast, mix bicarbonate of soda and lemon juice to make up the same amount of yeast that the recipe calls for.
Keep yeast in the freezer, it can be used for up to a year.
