Rack of lamb with cashew nut salsa

RACK OF LAMB WITH CASHEW NUT SALSA

2 racks of lamb, 5-6 ribs each salt and pep­per

SALSA

100 g cashew nuts, finely chopped 1 onion, finely chopped

2 gar­lic cloves, crushed

1 large tomato, seeded and chopped hand­ful of fresh pars­ley, chopped ex­tra chopped fresh pars­ley and diced

red onion to gar­nish 1 Sea­son the lamb with salt and pep­per and braai over mod­er­ate coals for 30 min­utes, turn­ing reg­u­larly.

2 Salsa Mix the in­gre­di­ents, ex­cept the gar­nish, and sprin­kle over the fatty side of the lamb. Braai for a fur­ther 10 min­utes. Gar­nish with the ex­tra pars­ley and onion. JANNO AND KARLA (AS SEEN ON KOM ONS BRAAI EPISODE 24 ON VIA)
