Rack of lamb with cashew nut salsa

RACK OF LAMB WITH CASHEW NUT SALSA

2 racks of lamb, 5-6 ribs each salt and pepper

SALSA

100 g cashew nuts, finely chopped 1 onion, finely chopped

2 garlic cloves, crushed

1 large tomato, seeded and chopped handful of fresh parsley, chopped extra chopped fresh parsley and diced

red onion to garnish 1 Season the lamb with salt and pepper and braai over moderate coals for 30 minutes, turning regularly.

2 Salsa Mix the ingredient­s, except the garnish, and sprinkle over the fatty side of the lamb. Braai for a further 10 minutes. Garnish with the extra parsley and onion. JANNO AND KARLA (AS SEEN ON KOM ONS BRAAI EPISODE 24 ON VIA)
