4 racks of pork ribs salt and pep­per

MUSH­ROOM SAUCE

10 ml (2 t) olive oil

1 onion, chopped

300 g mixed mush­rooms, chopped 250 ml (1 c) cream salt and pep­per

1 Sea­son the ribs with salt and pep­per and braai for 4-5 hours over mod­er­ate coals with the grid on the high­est level.

2 When the ribs are al­most done, cut the racks into in­di­vid­ual ribs and braai for a fur­ther 20 min­utes.

3 Mush­room sauce Heat the oil in a pan and fry the onion and mush­rooms un­til golden brown. Add the cream, re­duce the heat,

sea­son with salt and pep­per and sim­mer for 3-5 min­utes or un­til thick­ened.

4 Serve the braaied ribs with the sauce.
