Isabella’s yellowtail with soy and garlic sauce

Isabella Niehaus of Langebaan on the West Coast is a dab hand at cooking fish. Here’s one of her outstandin­g recipes.

SERVES6 Preparatio­n

5 min Marinating

1 hour Braaiing 12-15 min Cooking

5 min (sauce)

MARINADE

2 whole garlic bulbs

250 ml (1 c) lemon juice

250 ml (1 c) soy sauce

250 ml (1 c) olive oil

FISH

1 yellowtail, cleaned and butterflie­d

1 Marinade Grate the garlic bulbs on the coarse side of the grater – the skin will stay behind. Mix with the rest of the marinade ingredient­s.

2 Fish Pour the marinade over the fish and marinate for 1 hour.

3 Transfer the fish to a folding braai grid and braai, skin side down, for 10-12 minutes or until the flesh just turns white. Brush often with the marinade. Turn and braai the fleshy side for 2-3 seconds or until just browned.

4 Reduce the leftover marinade in a saucepan until fragrant and serve with the fish.
