Garlic brinjal flower
1 large brinjal
3 garlic cloves, crushed
60 ml (¼ c) chopped fresh
parsley
60 ml (¼ c) olive oil
250 ml (1 c) grated mozzarella

first slits. The brinjal should fold open like a flower.
2 Mix the garlic, parsley and olive oil and rub into the slits. Sprinkle the cheese into the slits.
3 Wrap in foil, arrange among moderate coals and cook for about 20-30 minutes or until done and the cheese has melted.
