Crumpets with braaied pineapples
MAKES 8-10 CRUMPETS
500 ml (2 c) self-raising flour 3 eggs
10 ml (2 t) oil
250 ml (1 c) water
TO SERVE
1 pineapple, peeled and sliced 125 ml (½ c) plain cream cheese 60 ml (¼ c) icing sugar lemon zest to garnish (optional)
1 Whisk the flour, eggs, oil and water together well and leave to rest for 15 minutes.
2 Heat a pancake pan over low coals and, using a soup ladle, pour a little of the mixture into the pan. When the crumpet bubbles on top, turn it over and cook the other side until golden brown. Repeat with the remaining batter.
3 To serve Brown the pineapple slices over the coals for about 30 seconds on each side. Mix the cream cheese and icing sugar.
4 Serve the crumpets with the braaied pineapple slices and cream cheese icing. Garnish with lemon zest (if using).
