Crum­pets with braaied pineap­ples

MAKES 8-10 CRUM­PETS

500 ml (2 c) self-rais­ing flour 3 eggs

10 ml (2 t) oil

250 ml (1 c) wa­ter

TO SERVE

1 pineap­ple, peeled and sliced 125 ml (½ c) plain cream cheese 60 ml (¼ c) ic­ing sugar lemon zest to gar­nish (op­tional)

1 Whisk the flour, eggs, oil and wa­ter to­gether well and leave to rest for 15 min­utes.

2 Heat a pan­cake pan over low coals and, us­ing a soup la­dle, pour a lit­tle of the mix­ture into the pan. When the crum­pet bub­bles on top, turn it over and cook the other side un­til golden brown. Re­peat with the re­main­ing bat­ter.

3 To serve Brown the pineap­ple slices over the coals for about 30 sec­onds on each side. Mix the cream cheese and ic­ing sugar.

4 Serve the crum­pets with the braaied pineap­ple slices and cream cheese ic­ing. Gar­nish with lemon zest (if us­ing).
