Baby potatoes with bacon and dill

1 LEMON AND GARLIC BAKED POTATOES

2 kg medium potatoes,

quartered

125 ml (½ c) olive oil salt and freshly ground

pepper

SAUCE

250 ml (1 c) extra-virgin

olive oil

125 ml (½ c) fresh

lemon juice

90 ml (6 T) chopped

fresh dill grated zest of 1 lemon 24 garlic cloves,

chopped

Preheat the oven to 180 °C.

1 Mix the potatoes with the oil and season with salt and pepper. Transfer to a large roasting pan and bake for 30 minutes or until the potatoes start to soften.

2 Sauce Whisk the oil, lemon juice, dill and lemon zest together. Set aside 30 ml (2 T) of the sauce.

3 Pour the rest of the sauce over the potatoes and return to the oven for 15 minutes or until golden brown and crisp.

4 Mix the reserved sauce with the garlic and transfer to a large mixing bowl.

5 Mix the potatoes with the garlicky sauce and serve.

2 BABY POTATOES

WITH BACON AND DILL

30 ml (2 T) olive oil

125 g smoked streaky

bacon, chopped

7 ml (1½ t) smoked

paprika

5 ml (1 t) ground cumin 5 ml (1 t) ground

coriander

500 g baby potatoes,

boiled and drained saltandfre­shlyground

pepper

2 dill sprigs, chopped 1 Heat the oil and fry the bacon until crisp. Add the spices and stir-fry for another minute.

2 Halve the potatoes and mix into the bacon mixture. Season with salt and pepper.

3 Remove the bacon and potato mixture from the heat and mix in the dill.

4 Put two sheets of foil on top of each other and spoon the potatoes into the middle. Fold the foil over to make a parcel.

5 Braai the potato parcel on a grid for 30 minutes or until the potatoes are deliciousl­y crisp.

CRUSHED BABY POTATOES

300 g baby potatoes,

boiled and drained TOPPING

250 g sun-dried

tomatoes, chopped 250 g pitted olives,

chopped 100gcapers

60 ml (¼ c) olive oil 1 Arrange the potatoes in an ovenproof dish and crush slightly with a fork.

2 Topping Mix all the ingredient­s well and pour over the potatoes.

3 Braai the potatoes in a kettle braai over high heat until golden brown and crisp.

Stir occasional­ly to prevent the potatoes catching.
