Lace pan­cakes with or­ange syrup

250 ml (1 c) self-rais­ing flour

1 egg

10 ml (2 t) oil

280 ml wa­ter ex­tra oil for greas­ing the pan


2 or­anges, sliced

500 ml (2 c) or­ange juice

60 ml (¼ c) honey

30 ml (2 T) rum (op­tional) or­ange seg­ments amd zest to gar­nish (op­tional) 1 Whisk the flour, egg, oil and wa­ter to­gether well and leave to rest for 15 min­utes.

2 Heat a pan­cake pan over low coals and brush with oil. Pour a thin stream of bat­ter in a criss­cross pat­tern into the pan to cre­ate a lacy ef­fect. Fry un­til bub­bles form on top, turn over and fry un­til done. Re­peat with the rest of the bat­ter.

3 To serve Braai the or­ange slices over the coals for 2 min­utes or un­til browned.

4 Sim­mer the or­ange juice, honey and rum (if us­ing) in a saucepan over medium coals un­til thick and syrupy. 5 Top the pan­cakes with the braaied or­ange slices, or­ange seg­ments and zest (if us­ing). Serve with the or­ange and honey syrup.
