Lace pancakes with orange syrup

250 ml (1 c) self-raising flour

1 egg

10 ml (2 t) oil

280 ml water extra oil for greasing the pan

TO SERVE

2 oranges, sliced

500 ml (2 c) orange juice

60 ml (¼ c) honey

30 ml (2 T) rum (optional) orange segments amd zest to garnish (optional) 1 Whisk the flour, egg, oil and water together well and leave to rest for 15 minutes.

2 Heat a pancake pan over low coals and brush with oil. Pour a thin stream of batter in a crisscross pattern into the pan to create a lacy effect. Fry until bubbles form on top, turn over and fry until done. Repeat with the rest of the batter.

3 To serve Braai the orange slices over the coals for 2 minutes or until browned.

4 Simmer the orange juice, honey and rum (if using) in a saucepan over medium coals until thick and syrupy. 5 Top the pancakes with the braaied orange slices, orange segments and zest (if using). Serve with the orange and honey syrup.
