Rub into chicken or steak before braaiing to

ensure a lovely char on the meat.

MAKES ABOUT 100 ml

30 ml (2 T) salt

10 ml (2 t) each cayenne pepper and paprika

15 ml (1 T) ground pepper 5 ml (1 t) peri-peri spice 10 ml (2 t) dried oregano

5 ml (1 t) dried thyme 5 ml (1 t) dried basil

5 ml (1 t) brown sugar pinch of mustard powder

15 ml (1 T) dried onion flakes 5 ml (1 t) dried garlic flakes Process all the ingredient­s in a food processor until fine. Store in an airtight container.
