A hot North African paste that’s particularly good as a rub on lamb.
MAKES ABOUT 260 ml
125 g dried chillies, chopped boiling water
20 ml (4 t) dried mint
20 ml (4 t) each ground cumin and ground coriander
5 ml (1 t) caraway seeds
10 ml (2 t) finely chopped garlic cloves
5 ml (1 t) salt
