What do you love to braai?

I absolutely love to make a chicken curry potjie, as the chicken gets super tender with the low and slow cooking in the potjie, and I think curry spices give lots of flavour to chicken. Fresh fish works very well with a bit of charring on the braai, my favourite is fresh yellowtail. I also love lamb loin chops with a bit of salt, garlic and lemon juice on a sunny summer afternoon with a glass of white wine! In terms of steak, my favourite is chuck with putu and a spicy tomato relish or chakalaka.

What do you need for a good braai? I can’t braai without a big wood fire. I’m not a fan of charcoal or gas, and the most important thing for me is to have a good supply of dry wood to make nice, big fires.

What is a must-have at your braai? A potjie – whether that’s for chicken curry, for putu or for the relish and chakalaka, I cannot make a proper braai meal without a potjie.
