Is­abella’s yel­low­tail with soy and gar­lic sauce

Is­abella Niehaus of Lange­baan on the West Coast is a dab hand at cook­ing fish. Here’s one of her out­stand­ing recipes.

SERVES 6 Prepa­ra­tion

5 min Mar­i­nat­ing

1 hour Cook­ing 12-15 min (fish) 5 min (sauce)


2 whole gar­lic bulbs

250 ml (1 c) le­mon juice

250 ml (1 c) soy sauce

250 ml (1 c) olive oil


1 yel­low­tail, cleaned and but­ter­flied

1 Mari­nade Grate the gar­lic bulbs on the coarse side of the grater – the skin will stay be­hind. Mix with the rest of the mari­nade in­gre­di­ents.

2 Fish Pour the mari­nade over the fish and mar­i­nate for 1 hour.

3 Trans­fer the fish to a fold­ing braai grid and braai, skin side down, for 10-12 min­utes or un­til the flesh just turns white. Brush of­ten with the mari­nade. Turn and braai the fleshy side for 2-3 sec­onds or un­til just browned.

4 Re­duce the left­over mari­nade in a saucepan un­til fra­grant and serve with the fish.
