Cheesy mushrooms with avocado spread
SERVES 4 Preparation 15 min Cooking 10-12 min
8 giant brown mushrooms salt and freshly ground black pepper 15 ml (1 T) olive oil
8 slices Brie or mozzarella cheese SPREAD
1 avocado, mashed juice of 1 lemon
60 ml (¼ c) mayonnaise salt and freshly ground black pepper 1 Mushrooms Place the mushrooms on a double layer of aluminum foil. Season with salt and pepper.
2 Drizzle the olive oil over the mushrooms and top each with a slice of cheese. Pinch the foil closed and place over hot coals for 10-12 minutes until cooked and the cheese has melted.
3 Spread Mix together all the ingredients. Season with salt and pepper and serve with the mushrooms.
