Mediter­ranean crushed baby pota­toes

300 g baby pota­toes, boiled and

drained

250 g sun-dried to­ma­toes, chopped 250 g pit­ted olives, chopped

100 g ca­pers

60 ml (¼ c) olive oil 1 Ar­range the pota­toes in an oven­proof dish and crush slightly with a fork.

2 Top­ping Mix all the in­gre­di­ents well and pour over the pota­toes.

3 Braai the pota­toes in a ket­tle braai over high heat un­til golden brown and crisp. Stir oc­ca­sion­ally to pre­vent the pota­toes catch­ing.
