Chicken and apri­cot ke­babs

4 chicken breast fil­lets, cubed 12 dried apri­cots

1 onion, cut into wedges

RUB

125ml(½c)apri­cot­jam

60 ml (¼ c) chopped fresh pars­ley 15 ml (1 T) chopped fresh thyme saltand­pep­per

TO SERVE

rocket salad

1 Thread the chicken, apri­cots and onion wedges al­ter­nately onto the ke­bab skew­ers. Ar­range in a mar­i­nat­ing dish.

2 Rub Com­bine all the in­gre­di­ents, rub over the ke­babs and sea­son.

3 Braai the ke­babs over mod­er­ate coals for about 15 min­utes un­til done, turn­ing fre­quently. 4 To serve Serve the ke­babs with a rocket salad.
