Chicken and apricot kebabs
MAKES 8 KEBABS Preparation 20 min Cooking 15 min
4 chicken breast fillets, cubed 12 dried apricots
1 onion, cut into wedges
60 ml (¼ c) chopped fresh parsley 15 ml (1 T) chopped fresh thyme saltandpepper
1 Thread the chicken, apricots and onion wedges alternately onto the kebab skewers. Arrange in a marinating dish.
2 Rub Combine all the ingredients, rub over the kebabs and season.
3 Braai the kebabs over moderate coals for about 15 minutes until done, turning frequently. 4 To serve Serve the kebabs with a rocket salad.
