Spiced cau­li­flower

Cau­li­flower is the ideal side dish for those want­ing to avoid carbs.

1 whole cau­li­flower salt

5 ml (1 t) whole cumin seeds pinch of ground cin­na­mon

and ground co­rian­der 30 ml (1 T) sesame seeds oil

125 ml (½ c) coarse

fresh bread­crumbs 60 ml (¼ c) grated

Parme­san cheese finely chopped pars­ley

to gar­nish

Pre­heat the oven to 180 °C.

1 Sea­son the cau­li­flower well with salt. Mix the spices and sesame seeds with enough oil to form a paste and spread over the cau­li­flower.

2 Mix the bread­crumbs and Parme­san cheese and roll the cau­li­flower in the mix­ture.

3 Trans­fer to a bak­ing sheet. Bake un­til just done, about 40 min­utes, and the bread­crumbs are crispy and browned. Sprin­kle the fresh pars­ley over. Cut into steaks and serve.

Over the coals Pre­pare as de­scribed, grease a large sheet of alu­minium foil with oil and wrap the cau­li­flower in it. Place among coals and cook un­til done.
