Mealies in bacon
MEALIES IN BACON 1 SERVES 4 Preparation 10 min Cooking 15-20 min
4 fresh mealies with leaves 45 ml (3 T) fresh herbs, chopped salt and freshly ground pepper 30 ml (2 T) olive oil 250 g streaky bacon
1 Clean the mealies of all hair but keep the leaves attached.
2 Mix together the herbs, salt, pepper and oil and pour over the mealies.
3 Wrap strips of bacon around the mealies, securing the strips with toothpicks that have been soaked in water before using
(to prevent catching alight on the fire).
4 Braai the mealies in a folding grid (specially designed for vegetables) over moderate coals for 15-20 minutes until cooked and the bacon is crispy.
