The mari­nade can be stored for up to a year in the fridge. Give it a good shake from time to time.

30 prawns

MARI­NADE

500 g dried chill­ies

250 ml (1 c) olive oil

250 ml (1 c) sun­flower oil

2 gar­lic cloves

250 ml (1 c) le­mon juice 30 ml (2 T) salt le­mon wedges to serve

1 Put the prawns in a glass bowl.

2 MARI­NADE Pulse all the in­gre­di­ents ex­cept the le­mon wedges for a few min­utes in a food pro­ces­sor un­til well blended.

3 Pour over the prawns, mix to coat well then mar­i­nate for about 1 hour.

4 Braai over mod­er­ate coals un­til just cooked. Serve with le­mon wedges.
