Braaied tortillas

These toasties are great for snacking on before a meal or serving for breakfast at the fireside. ONION AND BEER MARMALADE

15 ml (1 T) olive oil 2 onions, sliced into rings 30 ml (2 T) brown sugar 125 ml (½ c) beer

30 ml (2 T) balsamic

vinegar TORTILLAS AND FILLINGS 2-3 bacon rashers, cooked

and finely chopped 8 tortilla wraps

250 ml (1 c) grated mature

Cheddar cheese handful of rocket or

spinach leaves

1 Onion and beer marmalade Cook all the ingredient­s in a saucepan until thick, about 20 minutes.

2 Tortillas and fillings Mix the bacon and 60-80 ml (¼-¹⁄₃ c) of the onion and beer marmalade. Spread over half the tortillas.

3 Sprinkle the cheese and rocket or spinach on top.

4 Cover with the other tortillas, arrange in a folding grid and braai over hot coals until the cheese has melted, about 10-15 minutes.
