AP­PLE PUFFS

500 g ap­ples, peeled and

chopped

125 ml (½ c) bread­crumbs

125 ml (½ c) crum­bled

Nut­tikrust bis­cuits

75 g sugar

5 ml (1 t) ground cin­na­mon

125 ml (½ c) raisins (op­tional) zest of 1 le­mon

30 ml (2 T) but­ter

2 rolls (400 g each) puff pas­try 1 egg, whisked mas­car­pone cheese to serve Pre­heat the oven to 180 °C and grease a bak­ing sheet with non­stick spray or but­ter.

1 Mix the ap­ples, bread­crumbs, bis­cuit crumbs, sugar, cin­na­mon, raisins (if us­ing), le­mon zest and but­ter and com­bine well to form the fill­ing.

2 Cut the pas­try into long rec­tan­gu­lar strips about 6 x 20 cm. Put a spoon­ful of the fill­ing at one end of a strip and fold the pas­try over to form a tri­an­gu­lar pocket, then con­tinue fold­ing un­til the end of the strip like a samoosa. Se­cure ends us­ing wa­ter. Re­peat with the rest of the pas­try and fill­ing.

3 Trans­fer to the pre­pared bak­ing sheet, brush with the whisked egg and bake for 15 min­utes or un­til golden brown.

4 Braai over hot coals for a fur­ther 5-10 min­utes, turn­ing once.

5 Serve hot with mas­car­pone cheese.
