Family meals for the week

SERVES 4 Preparatio­n: 20 min Cooking: 20 min FILLING 15 ml (1 T) olive oil 15 ml (1 T) butter 125 g diced bacon

(optional) 1 onion, chopped 2 garlic cloves,

crushed 2 carrots, diced 500 ml (2 c) cooked

brown lentils 2 rounds feta cheese,

crumbled 10 g fresh coriander,

chopped grated zest of 1 lemon

and 15 ml (1 T) juice salt and freshly ground

pepper SAMOOSAS 500 g samoosa pastry 1 egg, whisked oil for deep-frying 1 Filling Heat the olive oil and butter in a pan and fry the bacon (if using) until crisp. Remove from the pan and set aside. Fry the onion and garlic in the same pan until fragrant. 2 Return the bacon (if using), add the carrots and stir-fry for 5 minutes. 3 Spoon the mixture into a bowl and mix in the rest of the filling ingredient­s. 4 Samoosas Place a spoonful of filling at one end of a strip of pastry. Fold the pastry over the filling to form a triangular and continue folding the pastry over the triangle until the end. Brush the tip with egg and seal. Repeat until all the filling has been used. 5 Heat oil for deepfrying and fry the samoosas in batches until golden brown. Drain on paper towels and serve with lemon wedges*.
