GOURMET BURGERS WITH BLUE CHEESE
MAKES 8-10 BURGERS Preparation: 20 min Cooking: 30 min
MEATBALLS
¼ meatball mixture (see recipe)
big handful of chopped walnuts
1 green apple, grated
BLUE CHEESE SAUCE
100 g blue cheese
250 ml (1 c) cream
freshly ground pepper
CARAMELISED ONION
1 red onion, cut into rings
oil
25 ml (5 t) brown sugar
45 ml (3 T) apple cider vinegar
ASSEMBLY
8-10 wholewheat seed rolls, halved and toasted on the cut sides
apple slices, extra blue cheese and rocket leaves
1 Meatballs Put the meatball mixture in a bowl, add the walnuts and apple and mix well. Shape into patties. Chill until needed, then fry in a griddle pan until done.
2 Blue cheese sauce Melt the cheese in a small saucepan with the cream, stirring until creamy. Season with pepper and allow to thicken slightly.
3 Caramelised onion Sauté the onion rings in the oil until soft, add the sugar and fry until caramelised. Add the vinegar and heat until fragrant. 4 Assembly Put a meatball on the bottom half of a bread roll and spoon some of the cheese sauce over. 5 Put a few apple slices on top, sprinkle extra blue cheese over and top with the onion. Add rocket leaves and the top of the bun.
