FOOD TO GIVE COMFORT
Hope Malau, food editor of our sister magazine Drum, has published his first cookbook. Here’s a selection of his recipes
JOHANNE 14 – John 14, the Bible text in which Jesus comforts his disciples – is what cabbage is called in townships due to its affordability. It’s also the name of Hope’s book, which includes recipes his father, Elias Mokoena, taught him. “So, if you have cabbage you shouldn’t let your heart be troubled,” Hope writes.
BOEREWORS BURGER WITH MONKEY GLAND SAUCE
“One of the recipes I learnt at my first restaurant job was for monkey gland sauce, which made me realise how much of a sweet tooth South Africans have.” SERVES 4 Preparation: 20 min Cooking: 45-50 min PATTIES 500 g boerewors,
casing removed 30 ml (2 T) Worcestershire sauce 30 ml (2 T) tomato
sauce 30 g dry breadcrumbs oil for frying SAUCE 10 ml (2 t) oil 1 onion, finely
chopped 2 garlic cloves,
crushed 125 ml (½ c) water 1 can (400 g) chopped
tomatoes 250 ml (1 c) tomato
sauce 125 ml (½ c) Worcestershire sauce 250 ml (1 c) hot
chutney 50 g sugar 30 ml (2 T) white wine
vinegar 5 ml (1 t) Tabasco
sauce TO SERVE 60 g butter 8 slices bread ½ head lettuce 2 tomatoes, sliced 4 slices cheddar
cheese fried chips (optional) 1 Put the boerewors mince, Worcestershire sauce, tomato sauce and breadcrumbs in a bowl and mix well. Shape the mince into 4 hamburger patties and chill in the fridge. 2 Sauce Heat oil in a pot over medium heat and fry the onion and garlic until tender. Add the remaining ingredients and stir thoroughly. Reduce the heat and simmer for 30 minutes, stirring occasionally. 3 To finish Heat oil in a pan over medium heat and fry the patties for about 8 minutes or until done to your liking. 4 To serve Spread butter on one side of each slice of bread. In a dry pan over medium heat, toast the slices on the buttered side. Layer lettuce, tomato and cheese on the unbuttered sides of 4 slices. 5 Top with patties and spoon monkey gland sauce over. 6 Close the burgers with the remaining bread, toasted side up. Serve with chips.
