CONFETTI PANCAKES
MAKES 10-12 MINI PANCAKES OR 6 LARGE ONES Preparation: 15 min Cooking: 20 min 250ml (1c) self-raising
flour 30ml (2T) sugar pinch of salt 45ml (3T) rainbow
sprinkles 250ml (1c) milk 30ml (2T) melted
butter 1 egg 5ml (1t) vanilla
essence a little oil for frying TO COMPLETE 500ml (2c) fresh fruit 125ml (½c) full-cream yoghurt or whipped cream extra rainbow sprinkles honey, to drizzle 1 Mix all the dry ingredients in a large mixing bowl until combined then set aside. 2 Whisk together the milk, butter, egg and vanilla essence. Add to the dry ingredients and whisk until combined. 3 Heat a little oil in a nonstick pan. Drop a spoonful of the batter in the pan. Fry over medium heat until bubbles start to form on the surface, turn over and fry until done. Repeat with the rest of the batter. 4 To complete Decorate the pancakes with the fresh fruit, yoghurt or cream and extra sprinkles. Drizzle with honey and serve.

1 MARSHMALLOW MILKSHAKE
SERVES 2-4 Heat 500ml (2c) milk in a microwave. Add 8 pink marshmallows to the milk and stir until melted. Heat again if necessary. Leave to cool. Add crushed ice to the milk mixture, pour into glasses and decorate as desired. Serve immediately.
