VEGGIE “PASTA” WITH AVOCADO CREAM
Instead of using spaghetti, cut raw baby marrows into ribbons and mix them with a creamy avocado sauce for a filling and wholesome meal.
SERVES 4 Preparation: 20 min
AVOCADO CREAM 1 avocado, peeled
and pip removed juice of 1 lime handful of fresh
coriander 2 garlic cloves,
peeled 60 ml (¼ c) olive oil salt VEGGIE PASTA 6 baby marrows, cut into ribbons using a vegetable peeler ½ cabbage, shredded 250g green beans,
roughly chopped 4 spring onions,
chopped 1 chilli, chopped
(optional) lime juice salt (optional) TO SERVE 1 avocado, peeled and
pip removed
1 Avocado cream Finely blend the avocado, lime juice, fresh coriander, garlic and oil together using a stick blender. Season with salt. 2 Veggie pasta Mix the baby marrow ribbons, cabbage, green beans and spring onions. Mix half the avocado cream through the mixture and season with the chilli (if using), lime juice and salt (if needed). 3 To serve Slice and/ or dice the avocado and arrange on the veggie pasta. Serve with the rest of the avocado cream.
