LAMB SOUVLAKI WITH TZATZIKI

SERVES 8

Preparatio­n: 15 min

Cooking: 35-40 min

Marinating: 1 hour

1 leg of lamb, cut into 5cm cubes

15ml (1T) Greek oregano

5ml (1t) salt

20 skewers

TZATZIKI

1 litre double-thick yoghurt

pinch of dried mint

1 garlic clove, crushed

5ml (1t) olive oil

1 cucumber, grated and strained

pinch of salt

SALAD

2 bunches of parsley, finely chopped

2 red onions, sliced

3 tomatoes, diced

1 cucumber, diced

juice of 2 lemons

pinch of sea salt

TO SERVE

8 pitta breads

1 Marinate the lamb with the oregano and salt for 1 hour. Slide onto the skewers and cook over coals.

2 Tzatziki Mix the ingredient­s.

3 Salad Mix the ingredient­s.

4 To serve Toast the pitta breads over the coals for a minute and add the lamb, tzatziki and salad.
