FUN WHOOPIE PIES

MAKES 25 COOKIE SANDWICHES Preparatio­n: 10 min Chilling: 1 hour Cooking: 8-10 min

COOKIES 230g butter,

softened 375ml (1½c) icing

sugar 1 egg 7ml (1½t) vanilla

essence 700ml cake flour 5ml (1t) salt 10ml (2t) baking

powder 375ml (1½c) rainbow

sprinkles MARSHMALLO­W ICING 16 white

marshmallo­ws 10ml (2t) milk food colouring in

various colours

Preheat the oven to 160°C and cover a baking sheet with baking paper. 1 Cookies Cream together the butter and sugar and beat until light and fluffy. Add the egg and vanilla essence and mix until well combined. 2 Sift together the flour, salt and baking powder. Add this mixture one cup at a time to the wet mixture until the dry ingredient­s are completely incorporat­ed. Add the sprinkles and mix until just combined. Wrap in clingfilm and chill in the fridge for an hour. 3 Divide the dough into two equal pieces and roll out between 2 pieces of baking paper to a thickness of 3mm. Use a round cookie cutter to cut out about 25 cookies from each half. Bake on the prepared baking sheet for 8-10 minutes or until done. Cool completely before making the icing. 4 Marshmallo­w icing Put the marshmallo­ws and milk in a large glass bowl and microwave for 1 minute, stirring every 30 seconds, until smooth. Working quickly, divide among 6 smaller bowls and add a different food colouring to each. 5 Sandwich the cookies together using the coloured frosting.
