FUN WHOOPIE PIES
MAKES 25 COOKIE SANDWICHES Preparation: 10 min Chilling: 1 hour Cooking: 8-10 min
COOKIES 230g butter,
softened 375ml (1½c) icing
sugar 1 egg 7ml (1½t) vanilla
essence 700ml cake flour 5ml (1t) salt 10ml (2t) baking
powder 375ml (1½c) rainbow
sprinkles MARSHMALLOW ICING 16 white
marshmallows 10ml (2t) milk food colouring in
various colours
Preheat the oven to 160°C and cover a baking sheet with baking paper. 1 Cookies Cream together the butter and sugar and beat until light and fluffy. Add the egg and vanilla essence and mix until well combined. 2 Sift together the flour, salt and baking powder. Add this mixture one cup at a time to the wet mixture until the dry ingredients are completely incorporated. Add the sprinkles and mix until just combined. Wrap in clingfilm and chill in the fridge for an hour. 3 Divide the dough into two equal pieces and roll out between 2 pieces of baking paper to a thickness of 3mm. Use a round cookie cutter to cut out about 25 cookies from each half. Bake on the prepared baking sheet for 8-10 minutes or until done. Cool completely before making the icing. 4 Marshmallow icing Put the marshmallows and milk in a large glass bowl and microwave for 1 minute, stirring every 30 seconds, until smooth. Working quickly, divide among 6 smaller bowls and add a different food colouring to each. 5 Sandwich the cookies together using the coloured frosting.
