TRY THIS MEAT-FREE, 100% VEGETARIAN MABELE MEAL WITH UMFINO PAP

SERVES 4 PREPARATIO­N: 30 min COOKING: 45 min

100g butter 1 bunch spring onions, chopped 2 cloves garlic, crushed 1 cup finely chopped cabbage 1 cup finely chopped spinach 2 medium sweet potatoes,

grated 750ml (3 cup) chicken stock 210g (1½ cup) King Korn

Mabele Coarse Meal salt and freshly ground black

pepper 1 In a large saucepan, melt the butter and fry the spring onions and garlic. Add cabbage, spinach and sweet potatoes, toss to mix and fry for 10 minutes or until wilted. 2 Pour in stock and bring to a boil. Lower the heat and simmer for about 10 minutes or until the vegetables are soft. 3 Add Mabele meal and, using a wooden spoon, stir until well mixed. Season to taste. Cover and cook over gentle heat for 25 minutes, stirring occasional­ly.

SSChef’s tips

To switch up the taste sensation, substitute sweet potatoes with turnips. Enhance the flavour by adding a cup of grated cheddar cheese at the end of the cooking time.

SERVING SUGGESTION Serve with your favourite home-made vegetable or meat stew.
