CAMPFIRE BAKED POTATOES AND ONIONS
SERVES 4 Preparation: 20 min Cooking: 40 min
4 potatoes, peeled 4 onions, peeled salt 8 thyme sprigs butter
1 Season the potatoes and onions with salt. Score the onions with a knife and put a sprig of thyme in each cut. Put the onion and potatoes on a large double layer of foil, dot with butter and close the foil into a parcel. Tuck under cool coals (or bake in the oven at 180°C) for about 40 minutes or until soft.
TIP
Use rosemary instead of thyme if you like.
