BRINJAL CHIPS
SERVES 4 Preparation: 15 min Standing: 10 min Cooking: 10-15 min
salt 2 medium brinjals, sliced paper thin oil for drizzling
1 Sprinkle salt over the brinjal slices and set aside for 10 minutes. 2 Rinse and pat dry. Arrange in a single layer on a large baking sheet and liberally drizzle oil over. Roast for 10-15 minutes or until crispy, turning often with an egg lifter to ensure the chips cook evenly and don’t burn.
TIP
Sprinkling salt helps prevent the brinjal soaking up too much oil.
