BABY SPINACH SALAD

SERVES 4 Preparatio­n: 15 min

VINAIGRETT­E 2 garlic cloves, crushed juice and zest of 2 lemons 45ml (3T) apple vinegar or rice vinegar 45ml (3T) olive oil 2,5ml (½t) Dijon mustard 10-15ml (2-3t) honey dash of soy sauce SALAD 100g baby spinach 1 red onion, thinly sliced 2-3 rounds feta cheese 60ml (¼c) toasted sunflower seeds for sprinkling

1 Vinaigrett­e Mix the ingredient­s well. 2 Salad Put the baby spinach and onion in a salad bowl – or individual glass bowls – and drizzle the vinaigrett­e over. Sprinkle the feta cheese and sunflower seeds on top.

TIP

You can use Cos lettuce instead of baby spinach if you prefer.
