BRAAIED MASALA STEAK GATSBY

The Gatsby is a much-loved street food in SA. We’ve turned it into a toasted braai sandwich, cooked to goldenbrow­n and crispy perfection.

SERVES 4-6 PREPARATIO­N: 20 MIN COOKING: 45 MIN

MASALA STEAK 15ml (1T) oil 250g beef strips

1 onion, roughly chopped 2 garlic cloves, finely chopped 15ml (1T) roasted masala 2,5ml (½t) turmeric 250ml (1c) beef stock salt and freshly ground pepper SPREAD 125ml (½c) mayonnaise 45ml (3T) mango atchar 2 chillies, chopped (optional) GATSBY 1 broad French loaf or ciabatta handful of fresh coriander 100g cheddar cheese, grated 1 portion cooked chips Make a braai fire with enough coals to toast the Gatsby. Position the grid high above the coals. 1 Masala steak Heat the oil in a deep pan and stirfry the beef strips until browned. Add the onion and garlic and stir-fry for 1 minute. 2 Add the masala, turmeric and stock and simmer for 30 minutes or until the meat is tender. Add a little water if the meat starts to dry out. Season with salt and pepper. 3 Spread Mix all the ingredient­s. 4 Gatsby Slice the crust off the top of the loaf if you want it to become more crispy, then halve the bread horizontal­ly. 5 Add a generous amount of spread on the inside of both halves. 6 Sprinkle the coriander over the bottom half. Add the masala steak and sprinkle the cheese over. Arrange the chips on top and cover with the other half of the loaf. 7 Braai the Gatsby on the grid above the coals until it’s golden on both sides and the cheese in the middle has melted. Cut into serving portions.
