COUSCOUS HALLOUMI PATTIES

A lot of people ask me, “Suzelle, what can I do with all that couscous in my cupboard?” This recipe is really outside the box and I know you’re going to love it!

These make a simple and delicious meal on their own or served with a crunchy side salad – or why not pop one onto a burger bun to make the ultimate veggie burger!

SERVES 6-8 PREPARATIO­N: 20 MIN COOKING: 30 MIN

EASY PEASY VEGETARIAN

300g couscous 350ml vegetable stock 200g halloumi, cut into 6 slices 250g sweet potato, cooked 10ml (2t) chopped fresh mint salt and freshly ground pepper drizzle of extra-virgin olive oil

1 large free-range egg, whisked sunflower oil for shallow-frying

1 Put the couscous in a bowl and pour the hot vegetable stock over. Cover with a plate and steam for at least 10 minutes. 2 Fry the halloumi in a nonstick pan for about 2 minutes or until it’s browned on both sides. Chop into small cubes. 3 Fluff up the couscous with a fork and mash up the sweet potato.

4 Mix the couscous and mashed sweet potato with the halloumi and mint and season with salt and pepper. Drizzle olive oil over and mix in the egg. 5 Shape the mixture into firm patties with your hands. 6 Heat sunflower oil on medium heat in a medium pan and cook the patties for about 4 minutes a side or until they’re golden brown. Don’t crowd the pan!
