Tangy CHAKALAKA-marinated CHICKEN WINGS

SERVES 4-6 AS A SNACK OR LIGHT MEAL / PREPARATIO­N: 20 MIN / MARINATING: 2 HOURS OR OVERNIGHT / STANDING: 15 MIN / COOKING: 25-30 MIN

These tasty, juicy wings are ideal to serve as a snack or light meal.

8-10 chicken wings MARINADE

1 can (410g) chakalaka

60ml (¼c) plain full-cream yoghurt 30ml (2T) chutney 15ml (1T) olive oil 10ml (2t) curry powder 2,5ml (½t) chilli powder (optional) 2,5ml (½t) ground cumin finely grated zest of 1 lemon TZATZIKI

½ cucumber

pinch of salt 250ml (1c) plain full-cream yoghurt 15ml (1T) lemon juice

1 garlic clove, finely grated

2,5ml (½t) dried mint or 5ml (1t) chopped fresh mint freshly ground black pepper

TO FINISH

a little olive oil

TO SERVE side dish of your choice (optional)

Put a close-fitting wire rack on a baking sheet and grease well with nonstick spray.

1 Arrange the chicken wings in a sealable marinating container.

2 Marinade Put the

chakalaka, yoghurt, chutney, oil, curry powder, chilli powder and cumin in the bowl of a food processor and pulse until smooth and well combined. Stir in the lemon zest.

3 Pour the marinade over the chicken wings and mix well, ensuring that the wings are well covered. Cover the bowl and marinate the wings in the fridge for 2 hours or overnight.

4 Tzatziki Finely grate the cucumber and place in a colander. Mix in a pinch of salt and leave for 15 minutes. Squeeze out all the liquid from the cucumber and transfer the flesh to a mixing bowl.

5 Add the yoghurt, lemon juice, garlic and mint and mix well. Season with salt and pepper and store in the fridge until needed.

6 To finish Preheat the oven to 180°C. Remove the wings from the marinade and arrange skin side down in a single layer on the prepared wire rack. Roast for 15 minutes.

7 Increase the oven temperatur­e to 200°C. Turn the chicken wings and drizzle a little olive oil over. Roast for another 10-15 minutes or until the wings are golden brown and cooked through.

8 To serve Spoon the tzatziki into a serving bowl and use as a dipping sauce for the wings. Serve as a snack or with a side dish, if preferred.
