Braai recipes for the South African family

Place the potatoes in a medium saucepan of salted, boiling water and cook for about 15 minutes until soft. Drain and transfer to a large bowl. Fork mash the potatoes together with lemon rind and juice, salt and pepper and 1 tablespoon of olive oil. Set aside. Heat 1 tablespoon of olive oil in a large non-stick frying pan over high heat. Fry the salmon for 2 to 3 minutes an each side and remove from the heat. Flake it into the potato mixture, add parsley and stir through. Form into patties and roll in breadcrumb­s to form a crust. Place on a tray, cover with cling film and place in fridge for half an hour to set. Braai over medium coals for a couple of minutes on each side. Serve in a soft bun with mayonnaise and lettuce.

SALMON BURGERS

Place both flours, baking powder, sugar and salt in large mixing bowl and stir well. Make a well in the middle and add the oil and water. Mix well and knead the dough until smooth. Divide dough into six pieces. Roll each piece into a long sausage (you can get your children to help with this). Place a 10cm piece of cooked boerewors on a sosatie stick (one per person). Roll the dough around the boerewors and hold over hot coals for about 5 minutes until the dough forms a golden, crusty bun around the boerewors. Make sure you supervise well or leave this part to an adult. Serve with chutney, mustard or tomato sauce (or onion marmalade and blue cheese for the grown ups).

Clean off most of the leaves from the rosemary sticks and rinse under cold water. Skewer the vegetables onto sticks. Place skewers in a plastic container or large Ziploc bag. To make marinade, shake all the ingredient­s together in an old baby food jar (or any jar with a tight fitting lid). Pour the marinade over skewers, place lid on container or zip up bag and place in fridge for at least 30 minutes. Braai over medium coals for about 2 minutes on each side.
