Oat flour pancakes (gluten-free)
Ingredients:
1½ cups oat flour (or blitz some rolled oats in a blender until fine) ½ teaspoon baking powder ½ teaspoon bicarbonate of soda ¼ teaspoon salt 1 cup buttermilk 1 egg butter for frying
Method:
1. Mix the flour, baking powder, bicarb and salt together in a medium bowl.
2. In a jug, whisk the buttermilk and egg together, then pour this mixture into the flour mixture. Use balloon whisk to mix it all together until you have a lump-free batter. Let the batter rest for 5 minutes.
3. Heat a tablespoon of butter in a non-stick pan over medium heat and fry spoonfuls of the oat flour batter until bubbly. Flip over and fry on the other side. Repeat the process with the rest of the batter, using more butter if needed. Serve with a dollop of Greek yoghurt, fresh fruit and a drizzle of maple syrup, or with butter and grated cheese.
