Bones and carcass of your last roast chicken dinner, for stock 2 cups water I baby marrow, diced 3 medium onions, thinly sliced 2 celery stalks, sliced crosswise 4 garlic cloves, crushed 2 medium carrots, chopped 1 boneless chicken breast, cooked and diced 1 Bring chicken carcass, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for up to 2 hours, then strain the mixture for clear chicken stock, or just remove bones if you prefer a textured soup. 2 Add carrots and marrow. Simmer, partially covered, for 40 minutes. 3 Stir in chicken breast cubes. Skim fat. Season as desired. 4 For a heartier meal, add cooked noodles to the soup when reheating.
