4 bagels butter

FILLINGS Smoked salmon bagels 1 tub cream cheese 250g smoked salmon 1 tablespoon capers ½ red onion, finely sliced 4 butter lettuce leaves

Egg mayonnaise bagels 2 hard-boiled eggs 2 tablespoon­s mayonnaise ¼ cup grated cheddar salt and pepper to taste chopped chives to serve

Roast veg bagels Selection of roast veg (aubergine, butternut, courgettes, onions) sundried tomatoes hummus pesto

Method 1 Slice open the bagels and spread butter on cut halves. 2 Place selection of fillings on table and let each person make up their own bagel sandwiches. 3 For salmon bagels, spread a little cream cheese on one half of bagel. Top with smoked salmon, add a few capers and onion slices. Drizzle a little freshly squeezed lemon juice over. Top with lettuce and close up your bagel sandwiches. 4 To make egg mayo sandwiches, fork mash the boiled eggs and combine with mayo. Season to taste. Spread over cut halves of bagels, sprinkle a little cheddar over and top with shopped chives. 5 For the roast veg bagels, spread hummus on top half of bagel and pesto on bottom half. Stack with a selection of roast veg and a few sundried tomatoes. Close up sandwich and serve.
