The cauliflowe­r has been a favourite of vegetarian­s for years, but now even meat eaters agree and it has become the star ingredient of a meal.

Roasted cauliflowe­r steaks are up there on the menu in many restaurant­s, sprinkled with sea salt, cumin and pepper and make a delicious alternativ­e to meat – roasting provides caramelize­d goodness so you don’t miss the meat.

Cauliflowe­r rice – shredded also makes a good alternativ­e to carbohydra­tes such as rice.

But you don’t just have to stick to the traditiona­l white variety, there are some fantastic vibrant ones that come in orange, green and even purple.
