Cauliflower
The cauliflower has been a favourite of vegetarians for years, but now even meat eaters agree and it has become the star ingredient of a meal.
Roasted cauliflower steaks are up there on the menu in many restaurants, sprinkled with sea salt, cumin and pepper and make a delicious alternative to meat – roasting provides caramelized goodness so you don’t miss the meat.
Cauliflower rice – shredded also makes a good alternative to carbohydrates such as rice.
But you don’t just have to stick to the traditional white variety, there are some fantastic vibrant ones that come in orange, green and even purple.
