CHOCOLATE CHIP BLONDIES

Blondies might be a dish I’ve shared with you dear readers before, but the fact is that one blondie is never the same, so therefore, it goes without saying that it never gets old!! Buttery with the right amount of chewiness coupled with a crisp finish.. these instantly take the cake, without being cake! Absurd humour aside, the everyday simple Blondie can be dressed up or down, to be eaten whenever the occasion takes your fancy. Dressed up with a drizzled cream cheese infused sauce and ice-cream or cut into plain square chunks and enjoyed simply over a hot cup of steaming tea or coffee. Also excellent companions in your children’s lunchboxes. Either way these blondies aim to please and never to disappoint!

Ingredient­s

8 Tbsp butter, melted 1 cup brown sugar 1 large egg 1 1/2 tsp vanilla extract 1/8 tsp salt 1 cup flour 1 1/2 cup chocolate chips

For the Sauce

1/3 cup butter 1 cup sugar 1 8 oz pkg cream cheese, softened 1/4 cup real kithul pani 2 Tbsp brown sugar Ice cream of choice

Instructio­ns

Preheat oven to 350 and grease an 8x8 baking pan. In a large bowl, combine butter and brown sugar. Mix until smooth. Add egg, vanilla, and salt. Stir until blended. Mix in flour until combined. Fold in chocolate chips. Spread the batter into the baking pan and bake for 25 minutes.

For the Sauce

In a medium saucepan, mix butter, sugar, cream cheese, pani and brown sugar. Cook over medium heat and stir until smooth. Simmer for 10-15 minutes, stirring frequently. Once the blondies are cooked and cooled completely, cut blondies into squares and serve with ice cream and drizzle sauce over the top.
