SIMPLE CHICKEN CASSEROLE

As a busy parent, a casserole should be your go to when the days have been long and you’re looking to whip something up in a jiffy. My closeted love is of course the simple chicken casserole, always different but never disappoint­ing, I tend to mix the chicken with whatever I have in the fridge at that time. With every family having their own specific casserole, this little number that I make for my brood satisfys many of the picky eater requiremen­ts and also reassures me that I have made “a” attempt at teaching them healthy eating!. However stressful your day is, this warm, cheesy casserole will warm all your troubles away. It will also provide your children with a balanced serving of foods, for you can hide those sneaky vegetables in layers of delightful goodness. Parenting days can be long, hairy and stressful to the point, so why make things complicate­d, just give my chicken casserole a try, like the swish of a fairy tale magic wand you’ll feel a whole lot better with a bite of this!

Ingredient­s

5 flour tortillas boneless chicken, boiled

1 packet cream of chicken soup made

1 tub of cream

2-3 diced tomatoes & 2 green chillies

3/4 cup of pasta roma garlic sauce

2 cups shredded cheese ~ I used Mozzarella or Kotmale swiss cheese

INSTRUCTIO­NS:

Preheat your oven to 350 degrees. Grease a 9×13 inch casserole dish. Stack all 5 tortillas on top of each other. Roll the tortillas up & then slice them into strips, about 1/4 – 1/2 inch thick.

Combine the tortilla strips, chicken, soup, cream, tomatoes, chillie & 1 & 1/2 cups of the cheese in a large bowl. Stir to make sure it's well.
