Rossini’s at Sheraton to present special Tuscan dinner

Rossini’s Italian restaurant at Sheraton Grande Sukhumvit is to present a special Tuscan wine dinner on Saturday, May 27.

Dining guests will be indulged by a 5-course dinner showcasing creative Italian menus selected and prepared by the hotel’s executive chef Gaetano Palumbo. Each course is complement­ed by fine Italian wines from Wine Gallery.

Among the dishes to be served that evening is sashimi-graded hamachi (yellow tail) with pickled vegetables and duck skin. The delicate chilled fish will be paired with Le Macchiole Paleo Bianco, 2011, a wine described by Wine Advocate as a “beautiful soft and creamy white wine with notes of stone fruit, orange blossom and white almond”.

Following the fish is Sicilian red prawns with chick peas and bean soup. The prawns are matched with Le Serre Nuove, Tenuta dell’Ornellaia, 2013, a blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, which was awarded 90 points by Wine Spectator.

Diners will also enjoy chef Gaetano’s home-made ricotta cheese with crab meat and nettle gnudi, zucchini blossom and mushroom sauce, as well as his perfect creation of caper and liquorice-crusted milk fed veal tenderloin. The course is paired with Castello di Fonterutol­i Gran Selezione, 2012, a fine example of a Tuscan vino made using 92% Sangiovese, and 8% Malvasia Nera and Colorino grapes.

A highlight of the evening is pigeon breast with beetroot, raisins, goat’s cheese, caramelise­d hazelnuts and Romanesco brocolli. The dish is paired with Sesta di Sopra Brunello di Montalcino, 2009, which was rated with 90 points by Robert Parker, and described as a wine with an “intriguing expression with a very fine and polished manner”.

The dinner will be wrapped up with a selection of Italian cheeses, coffee or tea and desserts, complement­ed by Le Macchiole Paleo Rosso, 2010, which Wine Enthusiast magazine called “an extraordin­ary wine that reveals an exquisite bouquet of black currants, crushed blue flower, leather and baking spices”.

Rossini’s “Super Tuscan Wine Dinner” will begin at 7pm with a selection of gourmet canapés to match with sparkling Zardetto Prosecco NV. The price is 3,800 baht per person.
