The fine dining restaurant by Michelin-star-studded chef Henk Savelberg serves up gourmet, modern French cuisine, a perfect unificatio­n between long-establishe­d dexterity and modern-day frills.

The menu is compact but updated regularly. Degustatio­n menus, priced 3,000 baht for four courses, 3,700 baht for six courses and 5,000 baht for eight courses, are also on offer.

Highly treasured dishes include lobster salad with foie gras (1,300 baht); a duo of mussels and langoustin­e (1,250 baht); grilled North Sea turbot with Epoisses sauce (2,250 baht); roasted lamb fillet with Lardo di Colonnata (1,900 baht); and Label Rouge chicken with Parmesan-tarragon sauce (1,700 baht); and strained yoghurt with rhubarb, raspberrie­s and vanilla (600 baht).

The triplex venue, which opened a month ago, handsomely unifies a grill room with an individual­ly highlighte­d cocktail bar, whiskey room and secretive chef’s table chamber.

Prime cuts of meat and seafood prepared by a Canadian head chef take centre stage at the grill room. Don’t miss French onion soup (250 baht); charcoal-grilled Rangers Valley rib-eye (1,450 baht); and flame-charred Patagonia toothfish (1,350 baht).

Desserts also well reflect the kitchen’s aspiration in delivering the profound comforting taste of home. Beverages are curated to complement the food. Reservatio­ns are highly recommende­d. Open daily for dinner, 6pm-10pm. Park at the hotel’s car park. Most credit cards accepted.

This 90-seater is a true southern restaurant, yet also doubles as an all-day dining café with a full-scale coffee bar set in the centre of the dining room, while a quarter of its menu is dedicated to Western favourites and light bites.

Highly recommende­d drinks are the orange espresso (120 baht); and rock coffee (140 baht).

From the Thai menu, worth having are the yellow curry with sea bass and coconut shoot (280 baht); deep-fried chicken with turmeric (180 baht); and wok-fried acacia, wild stinky bean, pickled garlic, glass noodles and prawns (200 baht).

Of the Western category, don’t miss dry-aged Australian tomahawk steak (2,500 baht per kg) served with southern-style curry sauce.
