Cooking desserts the French way
Lovers of French desserts wishing to refine their pastry skills should take note. Professional pastry chef Olivier Bajard will be flown in from France to conduct the first-ever “Introduction Of Sensory Taste Programme”, in Thailand at Fully Baked Story’s cooking studio, from Friday to Feb 13.
Held in collaboration with Ecole Internationale de Patisserie Olivier Bajard, one of France’s most famous pastry schools, founded by Bajard himself, this certificate programme will present ideas and creations from pastry-school founders, French pastry culture and the world’s pastry trends. It’s comprised of two intensive French pastry classes. The “Sensory Taste Based On Classic French Pastry” will allow participants to explore the original taste and ideal texture before proceeding to create the borderless taste and textures menus. This class will take place from Friday until Sunday, 9am-4pm.
The “Sensory Taste Based On The Variety Of Mousse Technologies” is a two-day class where participants will get to understand mousse structure and mousse theories, particularly science-related mousse technologies, before they will develop the best match texture and boost the taste applications. It will be held from Feb 12-13, 9am-5pm.
Both classes will be conducted in English with Thai translation by a professional interpreter. This is also the first chance for those interested in continuing their pastry skills in France to consult directly with the grand chef, who has earned the prestigious title of Meilleur Ouvrier De France (MOF), or Best Craftsman Of France.
The fee is 45,5000 baht for the first class and 33,500 baht for the second (73,000 baht for both classes), including an official certificate, a recipe booklet, an apron, product testing, lunch and beverage.
