LOCAL FLAVOURS SPUN INTO SOMETHING DIFFERENT

On Dec 1, chef Henrik Yde Andersen of Copenhagen’s Michelin-starred Kiin Kiin restaurant and chef Ian Kittichai of Bangkok’s Issaya Siamese Club are to join Chayawee Sutcharitc­han, head chef of Michelin-starred Sra Bua by Kiin Kiin in Bangkok, to present their firstever cooking collaborat­ion.

Chef Henrik cofounded Kiin Kiin in Denmark in 2005. The restaurant was instantly praised for its Thai food with an innovative twist. It went on to receive a Michelin star in 2008. He is also a judge on the Danish version of MasterChef.

Home-grown chef Ian Kittichai, meanwhile, is Thailand’s most familiar cooking wizard, who, in addition to being a TV personalit­y, leads the culinary direction of many dining establishm­ents, both in the Kingdom and overseas. His Issaya Siamese Club ranked No.21 on Asia’s Best Restaurant­s of 2017 and 2018.

Henrik and Ian will take the guest-chef seats at chef Chayawee’s kitchen at Sra Bua, and together the three chefs will showcase their distinctiv­e renderings of Thai cuisine through a six-course dinner dubbed Thai Gastronomy Series I.

The evening will see guests indulge in an extraordin­ary culinary journey wherein each chef will craft two dishes in front of the guests. Using various global cooking techniques, the three chefs will choreograp­h local ingredient­s from time-honoured recipes into daring and imaginativ­e new combinatio­ns.

Highlights include raw cod, spicy and marinated with Thai herbs; cod crackling and cod roe by chef Chayawee; Thai Kobe A5 Phoan-Yang-Kham beef, slow-roasted with Siamese cassia leaves and roasted chilli-coconut by chef Ian; and coconut Morpf-Mehkong sugar cane — passion fruit “en surprise” with ginger kefir infused pineapple and southern yellow curry ice cream, salted Amalfi and lemon meringue by chef Henrik.

Thai Gastronomy Series I with chef Ian at Sra Bua by Kiin Kiin will take place on Dec 1. Price is 5,800 baht per person, inclusive of wine pairing.
