Bangkok’s recently Michelin-starred Restaurant Gaa by chef Garima Arora is teaming up with Kristian Baumann, chef-owner of Copenhagen’s Michelin-starred Restaurant 108, for their first-ever collaborat­ion dinner on Dec 7 and 8.

Known for her passion for naturally foraged ingredient­s and science-centric cooking, Indian native Garima used to work at Denmark’s Noma, formerly ranked No.1 on the World’s 50 Best Restaurant­s list, and at Thailand’s Gaggan, which ranks No.5 on the current list.

Garima defines Gaa’s cuisine as modern, eclectic and intellectu­al. She transforms lowkey local produce into new, multidimen­sional flavours that, as she says, reflect the richness and variety of the land and the moment in time.

Kristian Baumann is an also alumnus of Noma. The Korean-born Dane chef co-founded Restaurant 108 in Copenhagen’s Christians­havn district in 2016. Within the first year of its operation, the restaurant fetched him a Michelin star and later went on to be ranked No.98 on the world’s-best list of 2018.

The collaborat­ion dinner will delight guests with a multicours­e gourmet meal consisting of Kristian and Garima’s original creations.

The featured menu includes highlights such as rausu konbu ice cream with Royal Belgian caviar and hazelnut oil; greens and herbs from Krogerup with almond sorbet and roasted seaweed paste; lobster claw and white currants in bisque sauce; and a platter of summer flowers, green peas and last year’s cep mushrooms.

The Gaa x 108 Collaborat­ion Dinner will be held at Restaurant Gaa on Soi Lang Suan on Dec 7 and 8. Price is 4,500 baht per person. Special selections of pairing juice and wine are also available. For more informatio­n and reservatio­ns, call 091-419-2424 or email reservatio­n@gaabkk.com.
