ITALIAN CHEF TO VISIT PHUKET

Stefano Baiocco cooks up a storm at Sri Panwa

From Dec 7 until 20 chef Stefano Baiocco of two Michelinst­arred Grand Hotel A Villa Feltrinell­i in Gargnano, Italy, will present a pop-up kitchen amid the tropical-island setting of Sri Panwa resort in Phuket, Thailand.

Baiocco’s interest in the culinary arts ignited after he entered the haute cuisine kitchen of Enoteca Pinchiorri in Florence. He later on perfected his profession­al skills and techniques by training under world-acclaimed chefs at top dining establishm­ents including Seiji Yamamoto at Ryugin in Japan, Joan Roca at El Celler de Can Roca and Ferran Adria at el Bulli, both in Spain.

During his two-week residency at Phuket’s 5-star resort, chef Baiocco will showcase his world-treasured culinary dexterity in a concept of cucina povera, Italian for “kitchen of the poor”, whereby dishes are crafted with simple local ingredient­s sourced by himself and his team across the island.

Served as an eight-course dinner menu, the meal will be an exciting blend of his uniquely imaginativ­e cooking and local elements. Highlighte­d dishes include shiso leaf and wagyu & fish salad and salsa ponzu; linguine with arrabiata sauce; lobster tortello with citrus consomme; turbot amatrician­a and potato foam; and lamb rack with Moroccan sauce and red pepper jus.

Pre-dinner canapés such as Parmesan cheese and apple bonbon; agliolino with carbonara sauce; and aubergine Parmigiana croquette and Italian cocktails and wine are also offered.

“I’m thrilled to have the opportunit­y to present modern Italian cuisine with an internatio­nal influence at Sri Panwa. It’s an exciting challenge to create unique Italian dishes from local Thai ingredient­s that I look forward to discoverin­g in the markets of Phuket, which I know are known for the finest and freshest seafood ingredient­s,” said the globally famous Italian chef.

The eight-course dinner is served at Baba Soul Food and priced at 4,999 baht per person. A 2-day-1-night, fine-dining getaway package for two persons is priced at 26,200 baht net. It includes one-night’s accommodat­ion in a private oceanview pool suite, an eight-course dinner for two by chef Stefano Baiocco, daily breakfast and compliment­ary minibar stock.
