BAIOCCO AT THE ALLIUM

The Allium Bangkok at the Athenee Hotel on Nov 6-10 will be offering a special series of set menus from highly-acclaimed Italian chef

Stefano Baiocco of two Michelinst­arred restaurant Grand Hotel a Villa Feltrinell­i in Gargnano, Italy.

A native of Marche region, Baiocco is one of the Top 50 chefs in the world, as rated by San Pellegrino, and the author of the award-winning cookbook Mise

En Place.

Known for his creative reinterpre­tations of traditiona­l recipes using simple ingredient­s with sophistica­ted components, Baiocco’s interest in the culinary arts began when he entered the haute cuisine kitchen of Enoteca Pinchiorri in Florence.

He later went on to perfect his skills and techniques by training under such renowned culinary masters as Seiji Yamamoto at Ryugin in Japan, and Joan Roca at El Celler de Can Roca and Ferran Adria at el Bulli, both in Spain.

At his idyllic restaurant on Lake Garda, he grows his own vegetables and herbs in the lakeside garden and greenhouse and uses them creatively in his cuisine. He has a vast knowledge of herbs and seasonal vegetables.

For a limited time only, Baiocco will be showcasing a selection of set menus for lunch and dinner to guests in Bangkok. Included are dishes such as chicken royale with crabmeat and sea urchin; salmon with foie gras and avocado; tortelli stuffed with roasted sea bass and lemon zest; sliced turbot braised in olive oil; and oven-roasted lamb fillet with almonds.

Prices are, per person, 2,688 baht and 3,888 baht for 3-course and 5-course lunch; and 6,288 baht and 7,288 baht for a 7-course and 9-course dinner. Wine pairings are available at additional cost.
